Macadamia Key Lime Cheese Cupcakes with Lime Essential Oil -
These Yummy frozen melt in your mouth morsels, have a luscious mellow lime flavor.
Crust Ingredients: 1 vanilla wafer or shortbread store bought crumb crust in foil pie tin, 1/2 cup finely chopped macadamias, 2 T. melted real butter
Filling Ingredients: 8 ounces cream cheese softened, 1 can sweetened condensed milk, 1/3 c. powdered sugar, 1 tsp. vanilla, 1/3 tsp. dōTERRA lime essential oil, 1 cup real cream whipped to stiff peaks.
Directions: Line a muffin tin with 12 paper liners. Place crust crumbs in a bowl, stir in macadamias, and melted butter. Using half the crumb mixture, spoon 1 tablespoon into bottom of each liner, pressing down to make a crust. Set aside.
With an electric mixer, beat the cream cheese and powdered sugar in a large bowl till creamy. Add the condensed milk, vanilla, and lime essential oil – blend till smooth. Stir in whipped cream. Fill cups almost to the top with filling (reserving leftovers for topping), place 1 T. crumbs on top, finishing off crumbs. Press crumbs down lightly. Cover with plastic or foil and freeze until firm. Cover and refrigerate remaining filling. Remove cupcakes from freezer, remove liners if desired, place on plates. Place a dollop of reserved filling on top and garnish for spring and serve.
Tip: Macadamia Key Lime Pie – place half of crumb mixture back in pie tin up the sides part way, and press, add filling, then other 1/2 of crumbs, cover with plastic top from pie crust and freeze – remove from freezer 10 minutes before serving – slice – place on plates, top with reserved filling – garnish and serve.
